Oh the struggles to find a healthy breakfast. Breakfast is so different in different countries. In Italy it is very common to have something sweet, like a croissant or a pound cake of some sorts, whereas in Norway we tend to eat something savory, like bread with cheese and ham or oatmeal. So what does a Norwegian girl living in Italy do?! Make healthy sweet muffins. I’ve always found it difficult to find a breakfast that fills me up and last me for a couple of hours. Lately, I found oatmeal that is like the oatmeal I get in Norway, so I’ve been having that with cinnamon and sliced bananas. YUMMY. I was asked by someone, living in Italy, the other day on my Facebook page http://www.facebook.com/idaskitchen1 if I had a breakfast recipe. I reckoned she wanted something similar to an italian breakfast so I sent her this recipe. They are so nice and you can make a big batch and freeze them in your freezer. I made a batch yesterday and let me tell you, it was a treat to have breakfast.
Ingredients:
240 ml vanilla Greek yoghurt(you can also use plain)
2 ripe bananas
2 eggs
480 ml oatmeal
35-40 g brown sugar
1 and 1/2 baking powder
1/2 teaspoon baking soda
120 ml chocolate chips
How to make them:
Preheat oven to 200 degrees Celsius.
Add oatmeal to a food processor if you have whole oatmeal instead of the fine type, a cut it until you have a fine mixture.
Add the remaining ingredients except for the chocolate chips and mix until you have a somewhat smooth mixture.
Scrape down any ingredients and mix in the chocolate chips.
Prepare a muffin tin if you have one, if not use paper muffin tins. The muffins tend to stick to the paper but I saw that this only happened the day I made them and the next day once they had cooled down completely and rested in the paper tins they didn’t stick as much.
Use a ice cream scoop, for a clean experience. If not use two spoons.
This recipe yields about 12 muffins.
Cook in the oven for 15-20 minutes at 200 degrees Celsius. Let cool and serve.
