OMG….it’s sooo fluffy!! I don’t usually make pancakes but these are to die for. So light and fluffy. Not light as in healthy hahaha. What I love about pancakes, is that you can dress them up with a variety of things. Jam, maple syrup, chocolate spread, icing sugar, fresh fruit and ice cream to name a few. You can also add chocolate chips or blueberries to the batter.

Ingredients:

500 ml buttermilk

480 ml flour

3 tablespoons sugar

4 tablespoons butter, melted

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

2 large eggs

Method:

Add all the dry ingredients to a bowl and mix them together.

Add the eggs, melted butter and buttermilk to the dry ingredients and stir until the mixture is well mixed. It should just be incorporated and a few lumps should be present.

Heat up a skillet or two, if you are not patient. Add about 50 ml or half a cup of batter for each pancake. Once you see bubbles and the edges are somewhat dry, flip them over and cook for about 1 more minute.

Remove and continue until you finish the batter.

Serve with the topping of you choice.
