Let’s just get right to it…
2 small zucchini
1 medium sized carrot
1/4 cup flour(whole wheat or regular)/ Or use an egg or two to bind the vegetables together
1/4 teaspoon baking powder
Salt an pepper to taste
Grate zucchini and squeeze out any excess liquid. Grate the carrot.
Add to a bowl and add baking powder.
Add flour and mashed potato and mix.
Using an ice cream scoop or just a spoon, form patties.
On a pan, add olive oil and cook the patties on both sides.
Serve as an appetizer, snack or even for breakfast with some eggs. You might like to dip the in a sauce of your taste or leave them plain.
