Don’t we all just need a day, every once in a while, to eat whatever we like without feeling bad afterwards?! So then we need a delicious recipe for that special day. This is by all means not a light recipe, so eat in moderation or just go bananas. Your choice. Remember nobody is judging you on your off day ;).
100 g milk chocolate, finely chopped
40 g cocoa powder
180 ml hot coffee
180 ml flour
1/2 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons melted butter
2 large eggs
1 teaspoon vanilla paste
Nutella for filling
White chocolate buttercream:
100 g white chocolate
480 ml powdered sugar
1/2 teaspoon vanilla paste
60 ml milk
110 grams softened butter
Food coloring of choice(optional)
How to: Preheat oven to 180°C
Put chopped chocolate and cocoa powder in a bowl. Pour over hot coffee and set aside.
In a bowl add flour, salt, baking soda, eggs and vanilla paste. Mix and add the chocolate-coffee mixture. Mix well.
Add paper liners to a muffin tin and fill 3/4 with batter.
Cook for 15 minutes or until when you stick a toothpick in, it comes out clean.
Remove the top using a knife or spoon and add 1/2-1 teaspoon of nutella and put back the part you removed
Now for the buttercream:
Melt white chocolate and add it along with the other ingredients and mix well. Add food coloring, if you like.
Add buttercream to a piping bag with the tip of your choice and frost the cupcakes as you like.
